Waffles
Gluten Free & Dairy Free
Waffles can be served in many ways with different ingredients, I often make it and kids will top up what they want for the day, easy peasy!
(Serves: Makes 4)
INGREDIENTS
* 120g GF Flour ( I use Healtheries Baking Mix) * 1/2 tsp Baking powder * 2 Eggs (I use size 7 eggs) * 20g Caster sugar * 1/2 cup Coconut milk ( I use unsweetened)* 50g Coconut oil, melted * 1 tsp Vanilla essence * 1/2 tsp Custard powder (optional - to give more favour)
INSTRUCTIONS
1. Beat eggs and sugar in a bowl until it becomes pale yellow. 2. Add in coconut milk and vanilla essence, mix well. 3. Sift in GF flour, baking powder and custard powder, mix well. 4. Add in melted coconut oil, mix well. 5. Leave aside for 20 minutes. 6. Pour the batter into the waffle makers for 5 minutes. (The time will be depended on the waffle size and thickness, it may vary from different waffle makers) 7. Serve with Blueberries, Vegan Butter and Maple Syrup.
